Winemaking: It is harvest by hand in small boxes by the complicated configuration of the terrain. Grape sunning in paseros 4 or 5 days and the pressing is done. The juice goes to stainless steel tanks at controlled temperature and fermentation begins. The process is cut when the alcohol balance acquired / desired sugars without allowing all the sugar is transformed into alcohol. For this purpose, cooled and filtered. In any case no addition of alcohol. After this it is breeding for 6 months in new French oak barrels of Allier.

Tasting Notes: The aroma toasted sensations, play with mineral notes (thanks to the slate terroir), herbs and ripe fruit fragrances. Concentrated mellifluous sweetness, fruit fragrances; develops a range of exotic sensations in the mouth, long and delicious aftertaste.

Pairing: Pates, blue cheese and tropical fruit desserts. The chef Sergio Hernan, the Dutch restaurant Oud Sluis (three Michelin stars), has made an adventurous recipe which combines foie gras with sweet iced Ariyanas.
