Vinification: Wine made from Cabernet Sauvignon grapes from our oldest vines of Salas Altas . Cabernet Sauvignon is fermented at a controlled temperature of 28 ° C with higher stages, to extract more color and grape tannins , for which we are also helping a proper pumping and several power cuts at times. After the alcoholic fermentation , the wine is macerated with the skins for two weeks to get a better extraction and better color stability . we then proceed to bleed these musts for malolactic fermentation, before the hour , oak After malolactic fermentation the wine is half in French oak barrels from different coopers and forests . The period of time in oak is twelve months to achieve the full integration of the grape with contribution of wood with oxygen .

Tasting notes:  Intense cherry color with a slight change in edge with légèrères orange shades at the intermediate layer . Clean and bright . Keeps its color. The nose smells integrated wood. Alcohol notes are not unpleasant. Aromas of the Mediterranean forest . Balsamic and Mint . Spicy but sweet. In the mouth it is intense. Envelops the palate and fleshy . Good acidity that makes you salivate. Tannin in the rounded end almost a year of polished bottle. Rating mineral scrub. A serious wine and plumb. Slight astringency .

Wine pairing: lamb cooked in the Hindu style
